Despite being her most recent addition to the domaine, Beaune Clos des Renardes remains as Fanny’s ‘coup de cœur’—“absolute favourite”. After falling in love with the parcel, she sees amazing potential for both its whites and reds.
The plot is surrounded by forestation, with wild flowers growing throughout. It sits above the Premier Crus of Beaune, approximately halfway between the north and south of the city’s delineation. The vines are between 40 to 50 years old, on clay-limestone soil.
Fanny’s gentle approach in the winery comes in the form of light pressing via pneumatic press, fermentation by natural yeasts, then ageing in older 500L neutral French oak. She’s not a fan of overworking her whites, stirring the wine just once during its time in barrel, while staying away from racking the wine. Across Fanny’s wines, she bottles them unfined & unfiltered with just a touch of sulphur.
