Périne Baillette leads her family domaine and is demonstrating an incredible understanding of the terroirs she works with. Based in the lesser-known village of Trois Puits, Périne’s fastidious work is drawing attention from a multitude of Champagne lovers and is quickly earning her recognition as a leading producer of Trois Puits. The vines have been pesticide-free for over a decade now; even the earth is worked by a pair of horses from her husband, Alexandre Chartogne of Chartogne-Taillet.
Le Village is the Baillette’s emblematic expression of Trois Puits, with a blend of 40% Chardonnay, 40% Pinot Noir and 20% Meunier. 40% reserve wines are used in the NV blend to add richness and depth, with 30% usage of barrels for primary fermentation before bottling. Dosage is kept low at 4.5g/L.
