Gounel-Lassalle Le Haut Belai

What: 52% Pinot Noir + 48% Chardonnay

From a single parcel, shaped very much like Texas. It draws its name from the bleating of the sheep that once grazed there. Situated towards Ludes, it sits atop a chalky subsoil over flint & clay.

As with all their single parcel wines, it's barrel-aged before going to bottle, where it is cork-aged for secondary fermentation. 

3,985 bottles + 200 magnums produced.

Arnaud Gounel, the fourth generation of the family, and his wife Sophie Lassalle now manage the estate’s 3 hectares of vines, having chosen to produce their own Champagne rather than remain part of the local co-operative.

Their focus is on showcasing the unique character of their 29 plots in Chigny-les-Roses, with several parcellaire bottlings designed to highlight the intricate nature of the myriad of soils under their feet. The vines are farmed with respect for nature and are in the process of obtaining organic certification. In the cellar, oak is primarily used, and majority of the wines are aged  tiré liège (under cork) for secondary fermentation. No dosage is added to any of their cuvées, allowing the complex and detailed expressions of the wines to shine in their purest form.

Where: Champagne, France
What: 100% Meunier

A tiny parcel, of only 180 metres length – which is always the first to be harvest for the domaine. Its soils are rich in loam, chalk and flint, where its old vines bury deep down. 

As with all their single parcel wines, it's barrel-aged before going to bottle, where it is cork-aged for secondary fermentation. 

Only 1,596 bottles + 200 magnums produced.

An east-west facing plot of just 27 ares (0.27 hectares), where the soils are incredibly nutrient rich, planted solely to Meunier. Its living soils giving an insight to its name – and as to why sheep (agneaux)  may have been kept there previously!

As with all their single parcel wines, it's barrel-aged before going to bottle, where it is cork-aged for secondary fermentation. 

Only 2,075 bottles + 200 magnums produced.

Its round, plumpness in the mouth gives a clear insight to the clay-rich nature of the Les Ruelles plot. An old-vine parcel planted by Arnaud's great grandparents which runs through the centre of Chigny-les-Roses. 

As with all their single parcel wines, it's barrel-aged before going to bottle, where it is cork-aged for secondary fermentation.
