In 2013, Champagne Domaine La Borderie was created in 2013 by siblings, Simon and Marie Normand, who took over the family estate of 11.5 hectares, around Bar sur Seine in the Côte des Bar; for comparison, Bar sur Seine is just 160km from the main city of Reims but also just 162km from Beaune, in the heart of Burgundy.
The Normand family have been providing grapes to the negociants for over 100 years, until Simon and Marie created Domaine La Borderie. With ‘High Environmental Value’ and ‘Sustainable Viticulture in Champagne’ certifications, sustainability and healthy vineyards remain at the core of their operations.
Val Moré is a 100% Pinot Noir single vineyard of the Domaine. It sees around 5% of barrel fermentation, with the remainder in stainless steel. The 2015 spent 4.5 years on lees and received a small dosage of 3g/L; only 1,800 bottles were produced, highlighting the miniscule size of the plot.
A relative newcomer to the world of Champagne, the wines from Simon and Marie represent an exciting new development in the Côte des Bar.
