MASTERCLASSES

New Bahru | 12—6.15pm

Deep dive into the world of Champagne with intimate masterclasses led by the producers themselves. Get a chance to taste exceptional bottles while deepening your knowledge of the region’s rich history and craftsmanship.

12—12.45pm | Beyond the Bubble: Rise of Coteaux Champenois with Juliette Alips (Domaine Les Monts Fournois) & Benoît Déhu

From a region that has historically struggled with ripeness to now producing some truly exceptional still wines, experience a variety of styles showcasing the region’s three signature varieties—including a pre-release sample of Domaine Les Mont Fournois’ Pinot Noir.

12—12.45pm | Vin Clair: Champagne, before the bubble with Hélène Charbaut

Very few outside of winemakers ever get to see Champagne before it undergoes secondary fermentation for its signature bubble. See Champagne, before the bubble with a trio of single variety still wines and their corresponding Champagnes from Hélène’s inaugural eponymous 2020 vintage.

2.30—3.15pm | Diving Deep: Underwater Ageing presented by Benoît Déhu & Fanny Heucq

Winemakers make many choices in how they make their wine—but not many choose to age underwater! Try two rare examples—including one from Benoît Déhu which he has never officially released— with their corresponding standard bottling for comparison.

3.30—4.15pm | Dosage Trials: The Impact of 1g with Pauline Collin-Bérêche

Dosage is one of the final choices a winemaker makes before release of their finished Champagne. See three variations, and the finished final product, to experience how a little amount can cause quite dramatic variations.

5.15pm—6.15pm | Charles Heidsieck Blanc de Millénaires back vintages with Elise Losfelt (video call)

In a truly one of its kind tasting, experience four back vintages of Charles Heidsieck’s Blanc de Millénaires. Chef de Cave Elise Losfelt will lead the tasting, joining us virtually from the estate in Reims.

Each of the bottles will be coming directly from the domaine’s crayere cellars.

Vintages on tasting: 1983 | 1985 | 1990 | 2006 | 2007

SAT 08 MAR

BUBBLES BY THE BAY

OverEasy | 7—11pm

Doing away with the de rigeur of the standard ‘gala style’ sit-down dinner that puts everyone to sleep, we’ll be continuing the good times with a feast overlooking Marina Bay.

With a highlight list of champagnes from producers available, it will a night of non-stop bottles popping & celebrations!

SUN 09 MAR

RECOVERY BRUNCHES

Claudine  / Bar Somma / Le Clos / Kotuwa / Le Bon Funk (Holland Village)
12pm—2pm

Sunday Champagne brunches hold a close connection to many in Singapore – yet are often more centred around ubiquitous bubbles and average food.

Today, we flip that paradigm on its head with a series of bespoke menus from a selection of Singapore’s leading venues. We’re dividing up the 30 producers and scattering them amongst the venues, to have a final, relaxed cheers to wrap up the three-day celebration.
